Company description
We are a family-run olive mill based in Sarteano, in the province of Siena (TUSCANY), at 573 meters above sea level — in one of the regions where the production of Extra Virgin Olive Oil is not just work, but passion and profession. We have always been an artisanal producer, crafting top-quality Extra Virgin Olive Oil exclusively with our own MILL.
The main cultivars used for our oils are FRANTOIO (also known as CORREGGIOLO), MORAIOLO, LECCINO, and PENDOLINO.
We are located in a region with a cold continental climate, which naturally protects our olives from external threats. The characteristics of our soil, combined with modern cultivation techniques, allow us to harvest healthy fruit, rich in all the essential elements needed to produce excellent and unique Extra Virgin Olive Oils — impossible to replicate elsewhere.
The milling takes place from mid-October to the end of November, a time when all our energy is devoted to producing our EVOs and sharing the story of our work and our mill.
Our doors are open all year round to anyone who wishes to discover more about this precious resource and our commitment to the land.

Cold extracted (27°C) in our Alfa Laval mill. Slightly filtered through cotton, giving it a naturally cloudy appearance. Stored under nitrogen (N) in stainless steel tanks. **Il Signorolio** represents the essence of our olive oil – a precious product born from our own olive groves and from olives brought in by generations of growers from the surrounding hills.
