from selected varieties grown on our farm:
Leccino, Caninese and Ascolana Tenera. The
olives are harvested and within a few hours
are taken to the modern continuos cycle oil
mill who processed them on the same day.
Bright emerald green. Nicely balanced and
harmonious oil, it can be perfectly matched
with creamy vegetable soups, fish recipes and
also for special handmade mayonnaise. It is
even ideal for drizzling over ice-cream.

MAURINO

Oil obtained from the pure processing of olives
of the Maurino variety. Grown in challenging
soils, the Maurino olive expresses the best
of its typical organoleptic characteristics. Its
aromas are intense, with hints of spices and
freshly cut grass. On the palate, it is elegant,
with almond notes and a pleasant final kick of
arugula-like spiciness.
At Scovaventi, the Maurino olive is grown in
association with the area’s wild herbs, and
this, combined with the abundance of stones
in the soil, particularly enhances its aromatic
notes. A perfect oil for pairings where its role
shifts decisively from a simple condiment to
a true ingredient. Recommended for summer
salads, seafood cruditès, delicate fish, as well

central Tuscany, initially admired for the beauty
of its foliage. Its elegant shape and the deep
green of its leaves made it popular in gardens,

beauty of the tree itself. Today, Leccio del
Corno is widespread in many regions, and its
oil is renowned for its bold yet non-aggressive
