Salami typical of Tuscany whose name derives from the intense and characteristic flavor that the fennel seeds release in the dough. It recently received recognition for Protected Geographical Indication, so manufacturers, only companies belonging to the homonymous Tuscan Consortium, following a product specification drawn up by themselves, which by providing their experiences have meant that the product follows a meticulous workmanship respectful tradition ... the mix of meat gives a further guarantee of quality, coming from the spinneret of the product specification of the hams "D.O.P." relatively breeding and slaughtering of pigs. Our Finocchiona at the recent International Food Awards in Brescia has been awarded the silver medal.
Prosciutto Toscano has a delicate flavor, the crimson red of the slices, dry and lean, the intense taste enhanced by a slight flavor, make it unique in the panorama of national hams. The protection of the Protected Designation of Origin gives the product the security of process necessary for recognized excellence. Characteristics: 100% Italian meat. Our hams are obtained through a process that respects the most ancient tradition. We use the finest legs of selected pigs, processed with the addition of salt and spices by expert hands that know how to take care of them. The attention paid to the salting, maturing and slow seasoning phases give the meat a particularly unmistakable taste and fragrance.

Our salami are obtained from 100% Italian lean and fine pork meats, processed in accordance with ancient traditions by adding salt and spices in a process taken care of by our artisan “artists”. The careful drying process and the subsequent slow seasoning give our salami an unmistakable aroma and a taste that is particularly appreciated by the most demanding consumers. All our salami are guaranteed to be free of gluten, lactose and milk derivatives.

Sausage… every nation, region, and country has its own sausage. Ours are made following recipes passed down from father to son. The different cuts of meat mixed with herbs and spices selected by us allow for the creation of various flavors: the classic Tuscan sausage, prosciuttella, spicy, with rosemary, with fennel, and with truffle.
It is the part of the cheek veined with lean trimmed in the traditional drop shape that after skilful salting is dusted with plenty of black pepper and hung to mature. Fragrant and tasty, it can be used in the most varied ways: from the classic amatriciana pasta, to toasted bread heated in the oven or as it is in an appetizing sandwich. Characteristics: 100% Italian meat. Sweet and delicate taste with intense aroma of pepper.
The lard in the highest part and embellished with a lean flap is used for the lard "Selection". After careful trimming it is massaged with a chopped of aromatic herbs, sea salt and just enough garlic, which over time will become a precious and fragrant aromatic brine that will accompany it for a minimum of four months during which it acquires the characteristic aroma. Characteristics: 100% Italian meat. Sweet taste characteristic of long seasoning.
This delight of the palate, we get from the central part of the pig: the belly. We in Tuscany call The Bacon Rigatino, because it is characterized by evident strips of lean alternating with the fat part that enhances the delicate and sweet flavor. Wrapped, because it is rolled on itself until it obtains a cylindrical shape, within which the flavors and aromas of aromatic herbs are enhanced in the long seasoning.
