From the acient Tuscan dairy tradition, produced with the milk collected only from selected farmers belonging to the Consorzio Pecorino Toscano PDO, this pecorino has a tender texture with a white , straw yellow colour. The aroma of fresh milk comes fully out, reminding to the beautiful Tuscan countryside where the flocks are free to graze.
Pecorino Romano DOP is a hard cheese, produced with sheep’s milk, derived exclusively from certificated farms in the province of Grosseto. It has a thin crust, its colour vary from pale ivory to a strawish yellow. The cheese can sometimes be covered with a special protection for foods in a neutral colour or black. The texture is compact and may present a limited number of holes. The flavour for the table cheese, aged for about 5 months, is slightly spicy and aromatic. In the grated cheese, matured for 8 months, the flavour is stronger and spicy. The cheese wheels have a cylindric form and can weight about 30 kg. This cheese finds its best and perfect use for pasta recipes

Fior di Seggiano Pecorino cheese acquires its full aroma and flavour after a period of aging which ranges from 50 to 60 days. As all our cheeses, it is white in colour with a homogeneous texture that preserves the scent of milk. It has a sweet taste, and quite spicy aroma for its “early age”. Fior di Seggiano is a highly versatile cheese easy to use and to pair with other foods.
Dolce Seggiano, having deep roots in a long family tradition, is a creamy cheese with a strong character that carries the aroma of fresh milk. It presents a slim, straw-coloured rind wheel, soft to the touch. Dolce Seggiano is a white cheese with a moist texture and a pleasant sweet flavour. It stands out among Pecorino cheeses for its unique, harmonius and creamy texture once its aroma is delicatelly liberated into the air.
The flavour of this cheese is enhanced by the unique maturing process that takes place in the heart of ancient tuff stone cave, whose walls create a microclimate similar to an antique cellar. Pecorino Grotta delle Fate is surface-treated with olive oil and matured in the cave for 60-90 days. Its paste is dense and compact, perfectly white in colour without holes. It is a high-quality matured cheese recognizable by its brick-coloured rind.
This cheese defines its maturation under hay. This ancient procedure gives Paglia e Fieno a delicious flavour and aroma. The hay maintains the ideal temperature and humidity level in cheese-ripening process.
This Pecorino mixes sheep’s milk together with our most famous Mediterranean herb: the rosemary. Although his freshness, it offers a delightful herbs scent.
Gran Riserva finds its best expression in an 8 kilos wheel form. The Riserva is treated with vegetable oil and is left to mature in cellars on wood boards for 12 months. After this long aging period, the Pecorino Riserva is extremely full-flavoured, with a firm pleasant texture.

A cheese with mountain blueberries, with a nice and lovely flavour. The sweetness and the intense colour of these little berries are pleasant both to the eye and the palate.
Brandan is a sheep’s milk cheese. After maturing for about 20 days, the forms are placed in terracotta pots (orci) made in the village of Petroio (Siena). Inside these fine and noble containers the Brandan cheese matures thanks to a recipe of Tuscan spelt and beer. After this aging process, the result are intense but extremely elegant flavours. The texture tends to be dense but still soft.
